Reed's Quesadilla Recipe

Ingredients: 3 tablespoons olive oil 1/2 medium red onion, chopped 4 garlic cloves, minced 1 can minced chipotle peppers in adobo sauce (drained) 3 scallions, thinly sliced 2 tablespoons honey 1 lb chicken 1 teaspoon salt 1/2 cup chopped cilantro 6 10-inch diameter flour tortillas 4 cups shredded fancy mexican cheese
Instructions: 1. Cook the chicken 2. Shred the chicken 3. In a large sauté pan, heat the olive oil over medium heat. 4. Add the onion and sauté until soft, about 5 minutes. 5. Add the garlic and cook 1 minute more. 6. Stir in the chipotle peppers and cook 10 minutes. 7. Stir in the scallions, honey, chicken, salt and cilantro. Keep warm. 8. Cook and assemble the quesadillas |
