For 2 venison burgers, 1/2 lb ground venison 1/2 to 1 jalapeno, chopped 2 slices red onion 4 slices bacon 2 brioche (or whatever) buns
Cook four slices of bacon in a frying pan till nicely browned. Remove the bacon from the pan. Put the venison patties into the bacon grease in the pan. I smash the chopped jalapeño on top of the patties. When you turn the patties, add the onion to the pan, so it cooks up a little. You can check temperature, meat should be 160°. Remove the burgers from the pan, add the onion, then 4 half-slices bacon to each and top with lots of chipotle aïoli.
