Pretty good meal I just made with some leftovers:

Baked sweet potatos at 425 for 20 min, flip halfway through.
Fry poblano, onion, jalapeno in one pan
Fry eggs in separate pan
Take baked sweet potato and add to pan with pepprs and onion and add cardamom, some paprkia, and tiny bit of chili powder
Cook white rice
Combine and serve

Salt and pepper can be added to taste and at whatever step. I added salt and a small amount of pepper to the potatos before baking.
